Your can do that but only if they all use the same smtp credentials.
Since your new hetzner is so much cheaper you’ll still come out ahead with three sites than just one at the old rate.
I wouldn’t recommend multisite with just 1gb of ram, and it is more trouble to get it configured, though the new hostname aliases env setting solves one of the biggest issues.
