Best way to re-do the discourse docker install (with backup)?

I’m starting to think some of my problems with my current docker install would be solved if I just went ahead and reinstalled it instead of going to the trouble of fixing little things here and there. I have that option so I may as well do it, right?

What I’m wondering then is what the best way would be to backup the users and threads/posts and then just have at the current install with a sledge hammer and install another and seed the old data in?

I know there is a “backup” option in /admin/backups. If this is the easiest way, just what settings does it backup and would making a backup with this feature be the go-to way of doing what I intend to do?
