How can I add custom category icons to the sidebar?

You add custom emoji Configure custom emoji and select them as the category icon in it’s settings

I believe those are custom emojis they added to the site, and used them in the category settings.

In Admin > Emoji, you can add your own emojis:

And I can then select them in the category settings:
