How do I configure Category Text align, to = Center?

Sounds like you have another component or some css code that is aligning it to the left. The default is the center, which is why it is centred when you preview it from the component. I would remove some of the other theme components that might be conflicting with it until you find the culprit, then you may have to make some code changes or something to fix it.
