There is no option to disable that behaviour directly. I think it’s controlled by the site setting enable_markdown_linkify, so you could disable this, but then it also disables auto-linking of plain URLs everywhere, not just emails…
The backtick solution is the easiest way, unless you want to build a plugin to overrule the markdown behaviour.
