I would go into email in your settings and if you were to turn on “email me when I’m quoted, replied to, my @username is mentioned” and change it to always then it should email you when your post has been edited also. If you want email notifications on edits, that would be one email per edit. If you want email notifications for not read edit notifications, that would be one summarizing email per (a configurable) time period, if there are new edits to your posts.

I don’t think such a setting exists. I have read related discussions about receiving notifications about edits for moderation purposes or being notified about edits to wiki posts, but those were on-site notifications.
