I was able to find out why the assignment wasn’t working. If anyone else needs to solve this problem, here’s my solution.
The submitted email address is not marked as “verified” by default. To achieve this, I went to the Admin area under OpenID Connect providers → Settings and set the value for “Email address verification in the token” to “Always check”.
