Há alguma complexidade com templates vs. a configuração email_subject que eu não entendo completamente — parece que esta última não é usada se houver um template, mas não tenho certeza quando não há um template! Mas, deixando isso de lado, a coisa básica é que, se a função que construiu os cabeçalhos personalizados usasse a mesma templating, isso funcionaria e os cabeçalhos personalizados poderiam ter informações dinâmicas úteis.
