For some categories and tags (like #announcements and new-feature) I would like to have a view with ordering depending on the date of the first post.

Not that I know of, but maybe the bosses can set that up to work.

For categories you can set this on the Settings tab of the Category Wrench:

Though for tags I think you’re limited to the URL filter.
