Is there a way to change the email template for “You have a new chat message“? I guess it’s not in the system admin UI as the chat feature is enabled by the Chat Plugin. Please correct me if I’m wrong.
Yes, you are correct those email templates are not in the usual section.
I think the only thing you can do is search for the text of the email template, and replace that via Admin > Customize > Site texts
