The category type can not be changed through “advanced settings” after it has been created with the simple creation workflow. Example:
This category was initially created with the “discussion” type. It shall now be changed into “Events”. It is possible to add “Events” but not possible to remove “Discussion”

Why do you want to remove it?
While I understand why this is confusing, I think it makes sense.
The category types are kind of a different way to set up plugins per category. If you add “Events,” the events plugin is enabled for that category. “Support” adds the solved plugin and “Ideas” enables topic voting.
“Discussion” is the default type. Not a plugin - just what you do in any category: create topics and replies. And I doubt that you don’t want topics in your category.
