When using Dark Theme, meetup embeds are difficult to read.

Any suggestions on how to improve this?

The problematic CSS comes directly from the Meetup API, so I suggest contacting them.

You can also try a override in your local theme:

#meetup_oembed {
    background: none !important;
}
