Can you place a picture to customize the entire length of the header? For instance try to make the entire image look like a real photo like leaves?

Do you mean the forum home page? That is just out of the box Discourse with customised CSS and Javascript, so yes!
As a non coder is it a hard template to adjust for?
It depends what you mean by non-coder. If you’ve never seen a line of code in your life then you will struggle. If you are a tinkerer you’ll be able to figure it out. I’d suggest having a try. You can always disable it.
