I updated this today for my site, but I still have a bit of extra text in the welcome email I can’t figure out how to change - even though it looks like text I had written in the past. Am I correct in assuming that editing the email templates is generally not possible? For example - we would like to brand the invitation template and make some other changes to the language to make it more clear what we’re doing.

You could disable the welcome message (there is a setting) and then create your own from scratch through the API.
