It would be great to allow Wiki posts only for specific categories. Or the other way around: disallow for specific categories.
Would this be simply possible?

This is not possible or planned at the current time. I suggest a public moderation policy for now.

You can have a Category set that posts are Wikis.
If you only want certain users creating these wikis you can use Group category settings. However only they will be able to edit Wikis created.
Settings ie
Everyone See
WikiCreators see/reply/create
To restrict wikis in other categories simply increase TL requirements for self wiki.
Having a specific Category for Wikis can be great when combined with Kniwkedge explorer plugin.
