Has anyone been able to set up alerts, (To Slack ideally) for when users hit cheers points milestones?
I want to do this for every 500 points users get, cant find anything online at all.

There is no functionality built into Discourse or the gamification plugin to give you what you are asking for here, so you will need something custom. You can build it yourself or ask for help in Marketplace.
Out of interest, can you tell us some more about your use case? Why are you seeking to notify in slack about activity in Discourse?
