When you use the Calendar function to insert a date, like this: 2020-01-06T23:30:00Z , it shows up in emails like this: “2020-01-06T23:30:00Z UTC”.

Which emails are you referring to?
Emails have to use UTC because it’s not like we can run fancy JavaScript to determine the user’s current date and time in email…
In this case, a meeting announcement email, as I said.
If these things aren’t going to look right in emails (the primary way people receive notifications of Discourse posts), perhaps the option to insert a date shouldn’t exist.
