Is it possible to change the topic author from ‘system’ to someone else?
I have updated and want to change these auto-created pages -
Terms of Service, Privacy etc…

Yes, you can change the owner of any post on Discourse. To change the owner of a topic, you just need to change the owner of the first post in the topic.
To do this, first select the post:
Then click the ‘change ownership’ button:
Those pages are displayed differently than most Discourse topics. By default, the topics are created in your Staff category, but they are not viewed by users from within that category. When users visit your Terms of Service and Privacy pages, they will not see the system user displayed as the author of the content.

Just to add, these pages are attributed to system because people come and go, but system is forever.

E poiché si tratta di cambiare la proprietà di un singolo post, esiste un metodo più semplice:

Clicca sul pulsante del menu a tre puntini “
…” sotto il post di cui vuoi cambiare la proprietà. -
Clicca sull’icona della chiave inglese nel menu che apparirà.

Clicca su “Cambia proprietà”, inserisci il nuovo proprietario e conferma.
Devi essere un utente dello staff (moderatore o amministratore) per vedere questa funzionalità.

È possibile modificare la proprietà dell’argomento al momento della pubblicazione? In modo che il post non mostri mai la proprietà originale.
È ancora valido? Quando guardo il menu oggi, vedo questo:
Sto cercando di cambiare la proprietà principale da un amministratore all’altro.
Hai provato a selezionare post di un solo autore? Se si tratta di un solo post, puoi anche usare l’icona della chiave inglese sul post.

Meglio tardi che mai. Puoi nascondere le revisioni dei post in modo che non appaia agli utenti che l’autore è stato modificato.
