I’m having the same issue now, it’s quite annoying! I will disable the setting – given the amount of apostrophes we use in French it makes writing a complete nightmare…
ETA: I’ll miss the emdash replacement; also, I’ve honestly never really seen that “single quote replacement” used in real life (at least not that I can remember), and having the apostrophe auto-replace to that is just impossible in French. We have like 3 apostrophes per sentence on average
