When I watched a category, An email will be sent when anybody create new topic.
But I see, Email show full content. How can I show only short content or excerpt?

Go to Admin/Settings/Email and scroll down to the bottom of the list. The last item is

post excerpts in emails
In notification emails, always send excerpts instead of full posts

Check this box and you should not receive the full posts, just excerpts for each post.
