I searched (pun) around and couldn’t find it, but is there a way to exclude options from the criteria when searching? For example including -@jesselperry to remove any posts by me from the search results, or -#feature to not include any results from the feature category?

I think it is good idea to add this as a new advanced search feature. I would suggest using additional format for search filters, similar to what it is used in Github search. It follows advanced filters formats which are also used as an alternative in Discourse advanced search:
- -user:dmacjam
- -category:feature
- -tags:plugins,sso
