Hi all, I’m trying to create a category specifically for handling support requests. These requests would contain confidential information so I’d like to know if its possible to create a category where the topics are visible only to the creator of the topic and the admin/moderators?

There are no per-topic permissions. What you’re looking for are private messages to group inboxes.

Create a group, send private messages to that group.
