これはDiscourse 公式の標準インストールに従っていますか？例えば、なぜ example.com に証明書が必要になったのでしょうか？

はい、これは Digital Ocean 上の Docker（マルチサイト構成）での古いインストールです。今夜以前は SSL に問題はありませんでした。
git pull の後に ./launcher rebuild app を実行しましたが、acme.sh.log には以下のエラーがまだ残っています:

LETSENCRYPT_ACCOUNT_EMAIL に使用しているメールを変更するのは良いアイデアでしょうか？

LETSENCRYPT_ACCOUNT_EMAILを変更して再構築したところ、再び動作するようになりました。しかし、何が起きたのか気になります。
