I was wondering if there’s a way I can send people to a private signup / account creation link to my Discourse community that’s closed for public registration.
Yes, visit your user page and press the Invite button – or press the Invite button at the bottom of each topic to invite people to specific topics.
You will need to be Staff for this to work, as I recall.

I see on the page that I can send invites to people. But I’d like to have the ability to send a private link to people for them to signup (without making the signup button visible anywhere on the site, for general public to sign up)
You’ll see a “copy link” button on the resulting dialog. You need to click through to see that.

Those links are only for a single email address.
I was wondering if I can get a link I can share with many people… privately… to set up accounts to my private Discourse community.

This has been discussed before and unfortunately, this feature does not currently exist. See this topic for what is nevertheless possible:
Is there any way of creating “anonymous” invite tokens? I would like to be able to hand out invite links that grants access to specific groups to people whose email I don’t have. (Obviously, I’m talking about people who are not already users on the forum.)
The point is to make sure that these new users have access to those groups right away, without having to apply for access.
I believe this is possible now, right

Yes, we now support this feature!
We have improved the core invite system in Discourse 2.5 to add a new feature – Invite Links.
Invite Links can be used multiple times and is not tied to an email. Only staff users (admins and moderators) can create multiple use invite links.
Creating Invite Link
Invite links can be created from /my/invited page by clicking on + Send Invite button → “Multiple Users” tab.
