Is there a setting somewhere that stops a post/topic appearing back at the top of the page when you edit it?

It is normal behavior for edits to the last post to bump a topic. Note that if the topic only has one post, the first post is also the last post. You can select the admin wrench and select Reset Bump Date to revert to the last bump date.
