How do I take a set of registered users, and subscribe them all to all the posts (current and future) in a particular post category.
All suggestions, including plugins are much appreciated.
You want to have them watch the category. There are some plugin examples that will force members of a group to watch a category. Try https://github.com/amical/discourse-watch-category and search “plugin group watch category”
