What are people’s thoughts about the easiest integration or way of allowing a discussion on a topic in Discourse to breakout to real-time conversation or chatting? I think of forum responses as slightly more thought out, so less ideal for “chatting” - which seems to be similar thinking from the Discourse team. But say you raised a question and wanted people to be able to go talk in more detail about it?

Absolutely, you add the chat-integration plugin, then set your conditions between categories and tags to notify to any number of chat services. This works totally awesome for our community.
