If I accidentally deleted the default theme but then restore it using this method:

You can easily add the Default theme again with creating a new theme on admin like this.
Click the Install button

Click the Create New tab and set name Default to the theme then click Create.

Check in the Theme is enabled by default field and select the Light color palette. (but I believe this will happen automatically)

… will auto-updates from the theme repo still happen? I don’t see the autoupdates checkbox for the theme anymore. It’s missing:

The default theme is just an empty shell so there is nothing to update. The reason you’re not seeing the autoupdates checkbox is because there isn’t even a repo.
