I think you are asking about the color scheme here, not the theme. It’s the WCAG light color palette. I think if you want to install the default Discourse theme, log in as an admin and go to Admin, Customize, and Themes. Select Install and choose Default from the list. I think that’s because it comes from a remote theme. If it’s your theme then you can change/remove color scheme in the theme about.json file. you should be able to just duplicate that scheme, then make what changes you want to it, and then change the color scheme to your new one in the theme color palette field.
