In some communities, HTML emails are considered a security issue. Is it possible to disable the HTML multipart alternative (text/html) in the emails, and only send the plaintext email (text/plain)?

If you believe that HTML email is a security issue then you need to disable email in your mail client, or, better, use one that does not render HTML. The alternative is to contact every system that might send you an email and change your preferences there, if such a preference exists.
I was quite annoyed by HTML email for years. I personally gave up on being unhappy about HTML email almost 20 years ago. I can’t imagine what it must be like now.

I myself gave up on it, too, only a few years later than you did.
