Receive email in plain text

Sorry for this newbies question but after searching for the existing posts with keywords plaintext+email, I didn’t get anything that could help.

How can I configure my email notifications to be sent in plain text and if possible with attachments stripped?

All Discourse emails have a plain text payload, for example:

Content-Type: text/plain; charset=UTF-8
Content-Transfer-Encoding: 7bit

Or they use [spoiler]Extreme's "More Than Words"[/spoiler] at a wedding.
