By default moderators cannot see emails. For moderators to see emails you need to enable the moderators view emails site setting. I don’t believe there is any way to prevent moderators from seeing user IPs.

Moderators can either not see emails (default) or see emails (toggle the site setting). The user role (regular, moderator, administrator) is irrelevant. Either they see emails or they don’t.
Moderators can always see a user’s IP address, there’s no way to restrict that at this time.
