Install with add-on volumes (such as EBS on AWS)

I saw some posts dealing with installation on AWS on a t2 machine, but there isn’t an organized way of including an add-on volume.

Is it not best practice? If I need 100GB, is it better to allocate a root volume of 100GB than to create a 10GB root volume and add a 100GB volume (such as EBS)?

If add-on volumes can be supported, can we have a section in the quick installation guide that lists all the mapping that should be done? (links and folders)
