Can I assign different ip to each forum so that google/inquisitive eyes do not know that they are related to each other?
Yes. If the server has multiple ips (or you use something like a digitalocean elastic ip) you could do that.

Si sabes cómo ejecutar un proxy inverso y puedes seguir Configurar Discourse en un servidor con sitios Apache existentes. Hay un tema similar para sitios NGINX.
