I have a question: if my forum is invite-only, when I send an invite to email@example.com, when that user gets the invite in the mail, will he/she be able to register with another email? Let’s say email2@example.com or will he/she be only able to register with the first one?

The invitee will only be able to sign up with the email that you send the invitation to, i.e. email@example.com in this case.
The user can however change their email after registration, if the site setting email editable is on.
