Reply-by-mail UTF-8 characters mis-rendering

Hi Discourse support and community —

I’m noticing that when sending replies to our site’s Discourse posts by plain text email, UTF-8 characters like the m-dash in my greeting above show up in the online version of the post and notification mails sent out by Discourse as byte sequences like — instead of the rendered unicode character. When sending the same message from the same user environment to an HTML-capable mail reader like Outlook or Gmail, it renders properly as an m-dash.

Does anyone have tips as to how to debug this behavior, or thoughts about whether it suggests our Discourse site is misconfigured vs. the outgoing email isn’t properly decorating itself as being UTF-8 encoded?
