Is it about to save money on hosting?
The downside that came to my mind first is you’ll have double trouble when your multi-site installation goes wrong, for example, with one of the updates…

Ultimately, yes. If you have lots of low-traffic sites, then hosting them all using a single docker container uses significantly less resources than running one-container-per-site. For example, on our hosting, we run hundreds of sites in a single multisite instance.
Yeah that’s true - it’s a case of ‘putting all your eggs in one basket’. A multisite instance is also much more complicated to set up and maintain. If you only have a couple of sites, two separate containers is probably the best option.
