Is there a way/setting to disable the feature that adds ?u=Username at the end of the link when sharing a discourse topic via the share link button?
No, there is no way to disable this.

Would it be possible to add a global setting or a per-user setting to disable this in the future?
I believe the assumption is that if someone doesn’t like that kind of behavior that they can already recognise and remove it themselves.
Thus far that has held pretty true.
Worst case they can also grab the URL direct from the address bar.

Technically you could build a theme component that disables it, CDCK (us) have no plans of creating such a component, if you really really want it maybe make a #marketplace topic.
