I downloaded discourse according to the process specified on the official website, and found that the download was a beta version. Is there a release version to choose from?

If you did a standard install, you’re on the tests-passed branch, which is also called the beta version. That is the recommended branch, and it is what we use in production.
There is a stable branch – has one or two releases per year. For most sites it is not recommended, as it only receives security patches and the most serious bug-fixes.
