Hide category from Latest list

I saw some topics about this, but I can’t find the option to hide it. For example:

Where is this default categories muted site settings?
I looked inside all options in https://dannytest.discourse.group/admin/site_settings, but I can’t find it.

I’m still on the trial version. Is this a “premium” feature or something?

I saw that plugin as well, but that won’t work on the trial version or the lowest paid hosted plan, which will be the one I will be on once I start my forum.

I wish this was available natively as a feature…

So what is that default categories muted site settings that people are talking about on that topic?

it is here:

go to all site settings and input “default categories” in the settings filter at the top of the page. There are default settings for watching and tracking as well.

EDIT: I’m now self-hosting, not on a trial version anymore.

Unfortunately, that doesn’t seem to work, or I’m missing something.
I added all categories to the Default Categories Watching, except one.

Then I created a new topic on that one I excluded, but when I go back to the main Topics page, I can see the topics there, the ones that were supposed to be excluded.

Maybe that option is not what I’m looking for?
If my question was not clear enough, I basically just want to exclude topics from a certain category from the main Topics page. For example if I have a Classifieds category and it’s very active, I don’t want new topics showing up in the Latest, because that will crowd the list for other users more interested in real discussions.
