My website has been active for a while. As the topic says, my php/msql site is on a DigitalOcean droplet. How would I install Discourse on a subfolder or subdomain?

How do I run Discourse on a folder on my site running PHP on LAMP on DigitalOcean

You would follow Discourse official Standard Installation and install it on its own droplet on a subdomain.
