You have to search for the texts you want to change:

Is it possible to change this highlighted text? I tried changing it by going to customize → text → search for this text, but it didn’t work.

That one is the js.category.choose field. To search based on the text it has the ellipsis as the HTML code included categoria… rather than ‘categoria…’
