How can I turn this off. I don’t want a default thread for every forum or sub forum and it appears I cannot delete these threads.

Hello!
The about XXX category topic can not be deleted, as it contains the description of the the category, which appears in various places. What you can do is unlist it, so none of the non-mod users can see it.
Just make sure not to delete it, as it may break things down.
