Maybe if you have Configuring incoming email to create new topics or group messages set up then you would just need to intercept the user’s email, check the Subject: header, add “Continuing the discussion…” text, maybe remove the In-Reply-To: header (or whatever it is called), and forward it to the relevant category’s email address.
