Now that I have changed the content of the Categories page to Tags and Latest, and removing the Category column, is there a way in which I can change the button name to say Tags + Latest rather than Categories? and if so, how?

Go to yoursite.com/admin/customize/site_texts
Search for this: js.filters.categories.title and you can change it.
