I would like to change the headings of the about page (“FAQ”, “Terms of Services”, “Privacy”). However, when I edit the title as an editor, the changed the heading does not show up in the published forum. What am I doing wrong?

Are you talking about these?
It sounds like you’re changing the title of the topic that contains the page content? that won’t have any effect. Those page titles are contained elsewhere and you can edit them if you visit admin > customize > site texts
These are the relevant options to search for and edit from the site texts page:
js.about.simple_title
js.guidelines
js.faq
js.tos
js.privacy
There’s also js.about.title, which is this header text (“About [sitename]”):
