Is there some Admin Site Setting which needs to be turned on for my site to reflect this behaviour?
Even my instance fully up to date, still when I click on the small ‘Chain’ button below a post, a sharing popup modal appears, the old way.
This did used to be a theme component, but it’s now a core feature. 
You can switch to this behaviour by adding ‘copyLink’ to your post menu admin setting.

Sorry I was searching for ‘Copy-Link’ or ‘Direct-Copy’.
But now found and ok.
