I see here it has a limit of 5000 uses. I know it would likely takes years to get to reach, but is there a way to turn this off? I ask because we want to give teams an “evergreen” link that they can use, so we can track which business team referred the user.

Sure, you can effectively turn this off by changing Invite link max redemptions limit to a crazy high number.
It does not, but you can keep track of the number of times an invite has been redeemed via the pending invites list, for the member who created the invite link.
That would make an interesting data explorer query, though! Which you could then have sent to yourself via PM using automation.
