Let's Encrypt Limit (again)

Continuing the discussion from Hit Let's encrypt renewal limit:

I hit the let’s encrypt limit while trying to install a new instance a few times and running into an error. A solution proposed above says:

Another way to get around the rate limit is to add another domain or sub-domain. Create a new certificate with your original domains and the new domain or sub-domain.

This sounds like the way to go… only problem: how do I do this?

Add a CNAME for some other subdomain to point to your site and then follow Setting up Let’s Encrypt with Multiple Domains
