There is an option to reset edit counter and reload the publish date of topics?
I want to put the forum on before some weeks of testing.

I am also interested, do I have a topic where the content is updated in # 1 and it’s up to 73 edits? So, is there any solution to delete the old revision history?

You may want to have a look at shared drafts and schedule publishing.
I’ve recently merged a new feature into Discourse called Shared Drafts. The feature is meant for forums where staff members want to work on drafts together before publishing them.
How to Enable
Go into your site’s settings and designate a category as shared drafts category:

Topic timers can be used to create a topic that can be scheduled to be published in the future at a later date. All timers can be used by staff (admin & moderators) as well as TL4 users

At a high level, these are steps to schedule a topic to be published in the future.
Create a new topic and publish it to a private category
Click the admin “wrench” icon next to the first post of the topic

Well, I really just want to reset all the posts to the moment when I’ll open my forum, not scheduling.
Thanks anyway. But it’s the same (in time) that just re-posting all again. I’ll need to post as system too.
Maybe could be great to have this functionality in the core.
